Broccoli Apple Salad


4 servings


3 cups fresh broccoli florets, chopped in bite size 
1/2 cup broccoli stems, peel off the skin on the stem , grate coarsely
1 shallot, finely chopped or red onion
1 large apple, cored, finely chopped  (prefer Gala Apple) – 1 tsp lemon juice to stop the Apple from turning brown
1/2 cup pecans, coarsely chopped
1/2 cup dried cranberries (or raisins, cherries,apricots)

Creamy Dressing
1/4 cup mayonnaise 
1/4 cup Greek yogurt
2 tsp honey
1 tbsp fresh lemon juice

Salt and pepper to taste 


In a large bowl combine broccoli, broccoli stems, carrots, onion, apples, lemon juice, pecans and dried fruit Dressing : Whisk together the mayonnaise, yogurt, lemon juice, honey, salt and pepper Add the dressing to the salad and toss to coat. Chill until ready to serve.
